Mashed Potatoes... Hint: it's cauliflower!

Ingredients

3 cups chopped cauliflower 1 cup cashews 1/2 cup fresh-squeezed lemon juice 1/2 cup fresh thyme chopped 1 tablespoon minced garlic 1 tablespoon Celtic seasoning

Directions

Soak the Cashews in a bowl and cover with water by an inch, then cover and soak at room temp up to 4 hours, and put in the refrigerator if soaking overnight. If you're in a hurry you can soak them for 15 minutes in very hot but not boiling water.

Steam the Cauliflower until just soft but not over cooked

Blend cauliflower in a blender using a little lemon jice and add remaining ingredients.

If you have a Green Power juicer use that instead. And voila you have an incredible healthy alternative to potatoes.
