Lakanto Monk Fruit Baked Paleo Donuts: So Healthy For You!

Ingredients

1/2c resistant potato starch(this is powerful for healing blood sugar and isn’t absorbed as a carb, it feeds good bacteria in your gut) 1/2c coconut flour 2/3c Lakanto brown sugar substitute(this is monk fruit extract you can buy at Whole Foods, Thrifties) - expensive but worth it. 1 tsp nutmeg 1 tsp baking powder 3/4 tsp sea salt 1/4c grass fed butter~ melted 3/4c coconut milk~ full fat from the can 3 large eggs

Mix the vanilla glaze frosting:
2 scoops vanilla whey isolate protein powder 2 tbsp coconut milk fat from the can 1-2 tbsp lakanto sweetner all depending on how sweet you like it

Directions

Mix all dry ingredients together in a large bowl well, then in a separate bowl combine all wet ingredients and mix well, then combine to dry ingredients and blend until there are no lumps. The batter will be thick.

Preheat your oven to 350 degrees and grease two donut baking pans well with grass fed butter. Spoon evenly into donut grooves, then bake for about 11 mins. The key is to get them just before they get too cooked through so they have the donut cake like texture.

Mix the Vanilla Glaze frosting ingredients above well until smooth, then glaze donuts when they come out hot. Let them cool on counter then put in fridge for 1 hour(if you can wait) as they are the best when they have absorbed the icing and cooled into donut cake heaven.
